Nothing says rhubarb and strawberry season better than these delicious Strawberry Rhubarb Scones! These flavourful, fluffy scones have to be one of the best scone recipes yet! A great healthy breakfast or snack option, this recipe comes with two options, the standard - naturally sweetened with maple syrup - or the keto option which uses a natural low carb sweetener blend.
Makes 8-12 scones.
What you'll need:
One egg, a mixing bowl, and a baking sheet. Parchment paper or a silicone mat are recommended but not required
Ingredients (standard option)
Almond flour, arrowroot flour, organic coconut flour, organic maple syrup, organic virgin coconut oil, organic coconut milk, lemon juice, strawberries, rhubarb, baking powder, baking soda, sea salt, vanilla.
Glaze: monk fruit/erythritol blend, organic coconut milk, strawberry juice, vanilla.
